Recipe: Couscous heaven...

I'm a good-food junky. So when my mother found this recipe and turned it into her own I was in heaven. Today I'll share it with you! Enjoy!

I don't like to eat a heavy meal after a hot summer day. This couscous is perfect for that sort of days. Light and healthy!

With this recipe you can variate a lot. I have found my two favorite options which I'll share with you today!

Every option starts with the basic.

What you need for the basic recipe:

for 4 persons

  • 300gr Dry couscous
  • 4 tablespoons of Olive oil
  • 400ml Chicken broth 

This is just the regular couscous. Now you can add things to your own taste.

Here are the two options:

Option 1. Wild chicken gone nuts:

for 4 persons
  • 300 gr Chicken fillet
  • 4 Wild peaches
  • 1 Lemon
  • 4 tablespoons of Honey
  • 58 gr Pecan nuts
  • 15 gr Mint
Put everything together with the couscous and serve it in a big bowl.

Option 2. Good chicken gone peach:

for 4 persons

Crispy chicken:
  • 350 gr Chicken (in pieces)
  • 50 gr Flower
  • Salt & Pepper
  • 1 teaspoon Cumin
  • half of a teaspoon of Nutmeg
Put everything together, cover the chicken with the flower mix (fully covered chicken). And then bake it in the pan until they are gold/brown. You've made your own chicken nuggets!

Rest of the Ingredients:
  • 4 Peaches (normal, not wild)
  • 1 Lemon
  • 4 tablespoons of Honey
  • 58 gr Pecan nuts

Put everything together with the couscous and chicken. Serve it in a big bowl.

It's officially a dinner recipe but I also like to eat it for lunch. You can do whatever you want with this recipe, leave the chicken. Add more fruits. Enjoy! And let me know if you're going to try!
